Oil-free Tahini Lemon Garlic Dressing (Dairy-Free and Vegan)

This tahini lemon garlic dressing is versatile, dairy-free, oil-free and easy to make. It makes a great salad dressing, dip or spread for sandwiches. 

Ingredients

Scale
  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice (about 2 lemons juiced)
  • 1 teaspoon maple syrup or honey
  • 2 cloves garlic, roughly chopped
  • 1/2 cup ice water 
  • 1/2 teaspoon himalayan salt
  • Pinch of pepper 

Instructions

  1. In a small food processor, blend lemon juice and chopped garlic. Use 1 clove if like a milder taste or if the clove is really large; use 2 if you like garlic or the cloves are small). 
  2. Add tahini, sweetener and blend. Add 1/4 cup ice water, salt and blend until smooth. If dressing is too think add more ice water, 1 tablespoon at a time. 

Notes

  • Add additional water for a thinner consistency. For best results, use runny tahini (not the paste which tends to get packed at the bottom of the jar). 
  • You can easily blend this in a bowl but for efficiency I’d recommend using a small food processor.
