Strawberry Chia Seed Pudding

Strawberry chia seed pudding is a healthy and delicious way to enjoy these powerhouse little seeds. This pudding is dairy-free, vegan and naturally sweetened. 

Ingredients

  • 1/4 cup chia seeds
  • 1 cup strawberries, leaves removed (or frozen)
  • 1 cup plant-based milk of choice
  • 2 teaspoons vanilla extract
  • 1 soft medjool date (or 2 teaspoons of maple syrup)

Instructions

  • In a high-speed blender, mix the strawberries, milk, vanilla extract, date (or maple syrup) until well blended
  • In a bowl add the chia seeds. Add the strawberry milk mixture to the bowl and whisk. Let sit for 5 minutes and then whisk again. 
  • Let sit for at least one hour in the the fridge, or overnight. 
  • Divide pudding into two glasses or bowls. 
  • If desired, add 2 tablespoons of coconut yogurt and additional berries. 

Notes

  • If you don’t have dates on hand, maple syrup makes an excellent substitution. Feel free to add more or less sweetener. 
  • Even though the seeds get soft after soaking, some people don’t like the “seedy” texture of chia pudding. If that’s the case, after you make the strawberry milk, add the chia seeds to the blender before chilling. You will get a more “pudding-like” texture.
