Easy Vegan Breakfast Scramble

June 30, 2021
Jump to Recipe·Print Recipe

This easy tofu breakfast scramble makes a healthy vegan, protein packed-breakfast! Its a delicious option if you are looking for an alternative to eggs and a vegan breakfast that is savory instead of sweet.

Plate with vegan tofu scramble, spinach, cilantro, jalapeño with a side of black beans and green tea.

Why You’ll Love this Tofu Vegan Breakfast Scramble Recipe

  • This tofu breakfast scramble comes together in about 10 minutes
  • This recipe makes 3 servings so is great for meal-prep.
  • A tofu scramble is filled with lean protein so is a great vegan post-workout breakfast.
  • Use the tofu recipe as your “base”. I chose to make this with spinach and added black beans and jalapeño, but feel free to get creative and add any combination of vegetables.
  • Serve as part of a “breakfast bowl”, with a side of sprouted-grain toast or in a gluten-free, sprouted grain wrap

How to Make this Easy Tofu Breakfast Scramble

What Type of Tofu To Use

Tofu has a lot of different varieties. I recommend looking for:

  • Firm tofu – Firm tofu has a little more water in it so it will make a softer “runnier” scramble
  • Extra firm tofu – Use this type of tofu if you want some crispiness to your scramble and/or if you prefer a more firm texture.
  • High-protein tofu – I like to use this as it yields a firm tofu and starts the day with a protein boost which leaves you satiated for longs.

Cooking Tips

  • Use your hands to crumble the tofu.
  • Use a non-stick pan so you can use less oil. This recipe really only needs 1 teaspoon of oil to infuse the garlic flavor. It can be made oil free if you follow and oil-free diet.
  • You don’t have to press your tofu for this recipe.
  • This tofu breakfast scramble recipe makes 3 servings. If you are cooking for yourself this is great for meal prep later in the week. I reheat quickly in the microwave.

More Healthy Breakfasts to Try

  • Pumpkin Spice Overnight Oats

This easy tofu vegan breakfast scramble is easy to make and is a delicious vegan alternative to scrambled eggs.

  • Author: Jeannine

Ingredients

Scale
  • 1 package extra firm or high-protein tofu, crumbled*
  • 1/4 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 garlic clove, minced
  • 1/4–1/2 tsp cumin
  • 1 tsp olive oil
  • 3 big handfuls of baby spinach

Instructions

  1. Crumble tofu in a medium-sized bowl
  2. Add salt, onion powder, garlic powder and cumin to tofu and mix well (if you like the taste of cumin add 1/2 teaspoon. If you don’t like the taste of cumin, only add 1/4 teaspoon).
  3. In a large non-stick skillet, heat oil over medium heat.
  4. After about 3 minutes, add chopped garlic and cook for one minute (do not let burn. If starts to brown quickly, remove from heat).
  5. Add tofu mixture to pan and cook for 5-7 minutes until any excess water evaporates and the mixture begin to brown. Stir occasionally.
  6. Once tofu begins to brown add the baby spinach. Stir frequently until baby spinach begins to wilt. Remove from heat.
  7. Serve with jalapeños, black beans, cilantro and/or gluten-free or sprouted grain toast.

6 common mistakes you may be making that’s making healthy eating harder.

1. Thinking every meal has to be an elaborate recipe. Especially during the week I put together simple assembly line style meals (protein + grain + veggie + sauce) and make a few special recipes on the nights I’ll have more time. Keeping meals simple also were key during the periods I was trying to actively lose weight.

2. Spending hours on meal prep. Meal prep doesn’t have to mean 3 hours on Sunday with the same meals all week. Prep few components throughout on one day (extra protein, grains in the instant pot) and use the ingredients as a base for meals throughout the week.

3. Shopping for multiple individual recipes. All it takes is a few busy days at work or a sick kid and I have food going to waste in my fridge. Instead I think in components (ground beef, vegetables, grains) and have some go to “assembly line meals” I can adapt.

4. Not inderstanding portion sizes. I was eating healthy but once I spent time weighing/measuring my food and track it I saw where I was undereating (carbs) and overeating (fats!). I also realized I was eating way too much protein and not enough fiber.

5. Neglecting fiber. just because you eat a lot of vegetables doesn't necessarily mean you're taking in enough fiber. (vegetable salads aren’t a great source, ladies). Being more intentional about fiber with grains, seeds, fruit will help keep you satiated and improve digestion.

6. Overlooking the freezer. I noe make sure the freezer is always stocked with frozen pre-cut vegetables, rice and proteins. When possible, make extra of soups and sauces to quickly reheat. This ensures you can always pull together a quick healthy meal and avoids defaulting to take out.

The goal is a system that works in real life. Follow @livepowerfullyco for more ways to get strong, lean, energized and confident in midlife.

The Busy woman’s cheat sheet to changing your body in midlife. Here are six things that I stopped doing that made healthy eating easier and help me get leaner and stronger at 47.

1. Thinking every meal has to be an elaborate recipe. Especially during the week I put together simple assembly line style meals (protein + grain + veggie + sauce) and make a few special recipes on the nights I’ll have more time.

2. Spending hours on meal prep. Meal prep doesn’t have to mean 3 hours on Sunday with the same meals all week. I prep a few components throughout the day (extra protein, grains in the instant pot) and use ingredients throughout the week.

3. Planning individual recipes. All it takes is a few busy days at work or a sick kid and I have food going to waste in my fridge. Instead I think in components (ground beef, vegetables, grains) to put something together quickly.

4. Neglecting portion sizes. I was eating healthy but once I started to weigh my food and track it I saw where I was undereating (carbs) and overeating (fats!). You can be eating clean but macros + calories count too.

5. Neglecting fiber. When I experimented with tracking my food I saw I wasn’t taking in nearly enough fiber (vegetable salads aren’t a great source, ladies). Being more intentional about fiber helped improve my satiety and digestion.

6. Forgetting about the freezer. I make sure the freezer is always stocked with frozen pre-cut vegetables, rice and proteins. When possible, I made extra of soups and sauces to quickly reheat. This ensures I can always pull together a quick healthy meal and avoids defaulting to take out.

If you're overwhelmed by all the health advice for women over 40, comment HABITS and you can immediately download the Health Edit - with simple habits you can start today for immediate return, questions to bring to your doctor, and labs worth discussing.

Here's something I wish more women understood:
Not every healthy habit deserves the same amount of your time and energy.

Three intentional strength workouts may do more for your goals than five random classes.

Eating enough to support your activity may serve you better than cutting another 200 calories.

And an extra hour of sleep might be more valuable than another early morning workout.

The point isn't to do everything. It's to understand what your body needs now and focus your effort there.

That's the philosophy behind Live Powerfully. I help ambitious women in midlife cut through the wellness noise and build personalized strategies for strength, energy, and long-term health—without making wellness another full-time job.

Comment HABITS and let's get you started.

This is where I think so many high-achieving women in midlife get stuck....

We're used to believing that more effort + less calories equals better results. So when our bodies don't respond to that strategy anymore, we double down.

But here's what I wish I'd understood sooner: if your whole goal is just to burn calories, you aren't building anything that is gonna support your metabolism in a long-term.

If you want to build muscle, you need a plan that challenges your muscles progressively (Ps - that doesn't always mean lifting heavier weights, but we'll get to that in another post.)

You need enough food to support that work.

And you need recovery so your body can actually adapt.

It's not about abandoning cardio or never being in a calorie deficit. It's about understanding how all the pieces work together instead of treating each workout like a transaction for calories in and out.

**This is exactly what I help women do through Live Powerfully.**

We look at your nutrition, strength training, recovery, and the realities of your schedule to build a personalized health strategy that supports your goals without making wellness another full-time job.

Because you've already built a big life. Your health strategy should help you live it.
