Healthy Vegan Pumpkin Spice Bread

October 26, 2020
Jump to Recipe·Print Recipe

The chill has finally settled in, the leaves have all turned, and daylight savings is about to end. It has taken me awhile but I’ve finally said goodbye to summer and am finally settling into fall. I’ve put away the summer clothes and have switched back to hot coffee. This also means I’m starting to cook and bake more hearty and warming recipes including pumpkin everything!

If you are looking for a fluffy, buttery pumpkin bread then I’m sorry to say this is NOT your bread. Instead this bread is SWEET, FLAVORFUL and HEALTHY. Its also a bit denser than your “white flour/egg/butter” pumpkin bread recipe. It is made with unrefined sugars, whole wheat pastry flour and is egg-free/dairy-free. I promise that no one will even suspect its vegan (my family certainly did not!)

Key Ingredients

Whole wheat pastry flour – Whole wheat pastry flour is more finely ground than whole wheat flour and produces a lighter, softer bread. It also has less gluten than whole wheat flour.

Pumpkin spice blend – The key here is to make your own spice blend! I love the pre-made pumpkin pie spice blends when you are in a pinch but they don’t yield the same flavor. I didn’t have powdered ginger so used real ginger that I grated with a microplane and WOW! The bread turns out so much more flavorful when you use the actual spices.

Flax egg – Flax eggs work well in this bread with the whole wheat pastry flour but as a result, the bread is a little denser.

Arrowroot powder – The arrowroot powder further softens the gluten proteins in the flour and makes a more tender bread. You can use cornstarch as a substitute.

Ingredients for Pumpkin Bread

Okay now let’s talk about the streusel topping. The topping is totally optional but it add a little more sweetness. I’ve made it both ways (with and without) and I encourage you to make the struesel!

I used coconut sugar instead of brown sugar but you can totally use brown sugar if you don’t mind refined sugars. I also used coconut oil here which DID NOT add an overt coconut taste to the bread. The topping also calls for pumpkin pie spice. Here I used the jarred spice mix for a shortcut since it is just the topping. I did not feel like it negatively affected the taste. If you don’t have a jarred pumpkin pie spice mix, you can also just use cinnamon.

Print Recipe

This healthy vegan pumpkin bread is dairy-free, egg-free, naturally sweetened and made with whole wheat pastry flour. Your friends and family will never know its vegan!

  • Author: Jeannine

Ingredients

Scale

Pumpkin Bread

  • 1/3 cup extra-virgin olive oil
  • 1/2 cup maple syrup
  • 2 flax eggs (2 tablespoon ground flaxseed + 6 tablespoons water)
  • 1/4 cup unsweetened milk (almond, oat or soy will work here)
  • 1 cup pumpkin purée
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons arrowroot powder (OMIT if you use 2 real eggs)
  • 1 3/4 cups whole wheat PASTRY flour
  • Pumpkin spice blend:
    • 1 teaspoon cinnamon
    • 1 teaspoon fresh ginger (or 1/2 teaspoon ground ginger)
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon allspice

Cinnamon Streusel

  • 1/4 cup whole wheat pastry flour
  • 3 tablespoons coconut sugar (or brown sugar)
  • 2 tablespoons melted coconut oil
  • 1 teaspoon cinnamon or pumpkin pie spice

Instructions

  • Prepare the flax eggs. Combine the 2 tablespoons flaxseed and 6 tablespoons of warm water. Stir and let sit for 10-15 minutes. It should be a GEL-LIKE consistency.
  • Preheat over to 325 degrees Fahrenheit
  • Grease with coconut oil a 9X5 inch loaf pan
  • PREPARE THE STREUSEL TOPPING.
  • In a small bowl, mix together the flour, sugar and spices. Add the melted oil and use your fingers to create crumbs. Set aside.
  • PREPARE THE BREAD:
  • In a large bowl, whisk together the olive oil and maple syrup. Fold in the flax eggs and blend well.
  • Add the pumpkin, milk, pumpkin spice mix, vanilla and salt and whisk to blend.
  • In a separate bowl, sift together the baking soda, arrowroot powder and whole wheat pastry flour. Add dry mixture to wet mixture. DO not overmix! A few lumps are okay.
  • Pour the batter into the greased loaf pan.
  • Top the batter with the streusel mix.
  • Cover with foil and bake for 30 minutes. After 30 minutes, remove the foil and continue to bake for 25-30 more minutes (55 to 60 minutes total). Check after 55 minutes and test with a toothpick – the toothpick should come clean.
  • Allow bread to cook for 15 minutes in the pan. Gently remove from loaf pan and let cool on a cooling rack for 15 more minutes.

6 common mistakes you may be making that’s making healthy eating harder.

1. Thinking every meal has to be an elaborate recipe. Especially during the week I put together simple assembly line style meals (protein + grain + veggie + sauce) and make a few special recipes on the nights I’ll have more time. Keeping meals simple also were key during the periods I was trying to actively lose weight.

2. Spending hours on meal prep. Meal prep doesn’t have to mean 3 hours on Sunday with the same meals all week. Prep few components throughout on one day (extra protein, grains in the instant pot) and use the ingredients as a base for meals throughout the week.

3. Shopping for multiple individual recipes. All it takes is a few busy days at work or a sick kid and I have food going to waste in my fridge. Instead I think in components (ground beef, vegetables, grains) and have some go to “assembly line meals” I can adapt.

4. Not inderstanding portion sizes. I was eating healthy but once I spent time weighing/measuring my food and track it I saw where I was undereating (carbs) and overeating (fats!). I also realized I was eating way too much protein and not enough fiber.

5. Neglecting fiber. just because you eat a lot of vegetables doesn't necessarily mean you're taking in enough fiber. (vegetable salads aren’t a great source, ladies). Being more intentional about fiber with grains, seeds, fruit will help keep you satiated and improve digestion.

6. Overlooking the freezer. I noe make sure the freezer is always stocked with frozen pre-cut vegetables, rice and proteins. When possible, make extra of soups and sauces to quickly reheat. This ensures you can always pull together a quick healthy meal and avoids defaulting to take out.

The goal is a system that works in real life. Follow @livepowerfullyco for more ways to get strong, lean, energized and confident in midlife.

The Busy woman’s cheat sheet to changing your body in midlife. Here are six things that I stopped doing that made healthy eating easier and help me get leaner and stronger at 47.

1. Thinking every meal has to be an elaborate recipe. Especially during the week I put together simple assembly line style meals (protein + grain + veggie + sauce) and make a few special recipes on the nights I’ll have more time.

2. Spending hours on meal prep. Meal prep doesn’t have to mean 3 hours on Sunday with the same meals all week. I prep a few components throughout the day (extra protein, grains in the instant pot) and use ingredients throughout the week.

3. Planning individual recipes. All it takes is a few busy days at work or a sick kid and I have food going to waste in my fridge. Instead I think in components (ground beef, vegetables, grains) to put something together quickly.

4. Neglecting portion sizes. I was eating healthy but once I started to weigh my food and track it I saw where I was undereating (carbs) and overeating (fats!). You can be eating clean but macros + calories count too.

5. Neglecting fiber. When I experimented with tracking my food I saw I wasn’t taking in nearly enough fiber (vegetable salads aren’t a great source, ladies). Being more intentional about fiber helped improve my satiety and digestion.

6. Forgetting about the freezer. I make sure the freezer is always stocked with frozen pre-cut vegetables, rice and proteins. When possible, I made extra of soups and sauces to quickly reheat. This ensures I can always pull together a quick healthy meal and avoids defaulting to take out.

If you're overwhelmed by all the health advice for women over 40, comment HABITS and you can immediately download the Health Edit - with simple habits you can start today for immediate return, questions to bring to your doctor, and labs worth discussing.

Here's something I wish more women understood:
Not every healthy habit deserves the same amount of your time and energy.

Three intentional strength workouts may do more for your goals than five random classes.

Eating enough to support your activity may serve you better than cutting another 200 calories.

And an extra hour of sleep might be more valuable than another early morning workout.

The point isn't to do everything. It's to understand what your body needs now and focus your effort there.

That's the philosophy behind Live Powerfully. I help ambitious women in midlife cut through the wellness noise and build personalized strategies for strength, energy, and long-term health—without making wellness another full-time job.

Comment HABITS and let's get you started.

This is where I think so many high-achieving women in midlife get stuck....

We're used to believing that more effort + less calories equals better results. So when our bodies don't respond to that strategy anymore, we double down.

But here's what I wish I'd understood sooner: if your whole goal is just to burn calories, you aren't building anything that is gonna support your metabolism in a long-term.

If you want to build muscle, you need a plan that challenges your muscles progressively (Ps - that doesn't always mean lifting heavier weights, but we'll get to that in another post.)

You need enough food to support that work.

And you need recovery so your body can actually adapt.

It's not about abandoning cardio or never being in a calorie deficit. It's about understanding how all the pieces work together instead of treating each workout like a transaction for calories in and out.

**This is exactly what I help women do through Live Powerfully.**

We look at your nutrition, strength training, recovery, and the realities of your schedule to build a personalized health strategy that supports your goals without making wellness another full-time job.

Because you've already built a big life. Your health strategy should help you live it.

Follow @LivePowerfullyCo for less wellness noise and more of what actually works.
