Steamed Haricot Verts and Potato with Lemon Sumac Dressing

How soon is too soon to start planning the menu from Thanksgiving? Thwarted by the pandemic, we may not be hosting a huge party but even though our day may look a little different, I still plan on filling the table with traditional foods. However, if I’m the one cooking of course I’ll be putting a slightly healthier spin on things. Green beans typically show up on the Thanksgiving day table but there will be no green bean casserole for me! I’ve created this easy haricot verts (aka. French green beans) with purple potato side dish that is finished with a lemony dressing.

The Benefits of Potatoes

I’ve been obsessed with purple potatoes in recipies lately. Not only do they look pretty but they are rich in a polyphenol antioxidant called anthocyanin which has been shown to help lower blood pressure, reduce cancer cell proliferation, improve vision and may even protect your skin against UV skin damage (the same antioxidant is also found in blueberries).

I also think in general potatoes get a bad rap because of people’s fears about carbs.

  • Potatoes are full of fiber and are incredibly satiating.
  • They are a great source of resistant starch which feeds your gut biome.
  • They are a great source of carbohydrate if you are an athlete providing both carbohydrates to help fuel, refuel and improve performance.

The Recipe

This recipe is actually super easy. While you steam the vegetables, you toast the pumpkin seeds and make the lemony dressing. The beans marinate in the dressing and should be room temperature so its a good side dish if you need to make something in advance to save space in the stove or in the fridge. The secret ingredient is a lemony spice called sumac, but you can always replace the sumac with lemon zest instead.

Who else is planning their Thanksgiving meal already?

A beautiful and healthy vegan side dish perfect for Thanksgiving, or any other family dinner. If possible, use purple potatoes to really make this dish pop. You can prepare this side dish in advance and let it come to room temperature about 1 hour before serving.

Ingredients

Scale
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup raw pumpkin seeds (pipits)
  • 1 lb of haricot verts (or green beans)
  • 1 1/2 cup quartered purple potatoes (or red potatoes – about 1 pound)
  • 1/4 cup lemon juice
  • 1 teaspoon sumac or 1 teaspoon lemon zest
  • Parsley for garnish
  • 1/4 teaspoon salt
  • Pepper to taste

Instructions

  • Steam green beans for 3-5 minutes (to your desired tenderness) until bright green and tender. Transfer to an ice water bath.
  • Steam quartered potatoes for about 10 minutes (until tender). Drain and set aside.
  • Cook pumpkin seeds in a pan over medium-high heat until they start to brown. Set aside.
  • Whisk olive oil, lemon juice, sumac OR lemon zest in a bowl. Add 1/4 teaspoon of salt and 1/8 teaspoon pepper (add more salt/pepper to taste).
  • Combine green beans and potatoes in a bowl and toss with 2 tablespoons of dressing. Add more dressing to taste. Toss and coat with dressing and allow to sit at room temperature for 1 hour.
  • Garnish with pumpkin seeds. Top with parsley to taste.

apparently, being in your 40s comes with a second full-time job: managing your health. Unpaid, of course.

It's exhausting just keeping up with all the things we're supposed to be doing. But here is what I wish more women understood: you don't need to optimize every aspect of your health to make meaningful progress. You need to understand which habits will make the biggest difference for your body, your goals and your life. And then find a way to do them consistently.

That's a big part of what I do with my coaching clients. We cut through the endless wellness advice, focus on the fundamentals and build a personalized strategy that doesn't require health to become another full-time unpaid job.

Because you've already got enough on your plate and we're still trying to remember why we walked into the room.

DM me if you're struggling and I can share my personal advice on your situation

Preparing nutritious meals doesn't have to be a part-time job.

Between work meetings, school pickups and kids' activities, is your lunch whatever you can grab in five minutes? A protein bar. A handful of crackers. Leftovers from your kid's plate. Or maybe you skip it altogether.

And then you're wondering why you're exhausted, craving something sweet at 3 PM and starving by dinner.

Here's the thing: You can't expect your body to perform at its best when you're consistently under-fueling it.
Especially in midlife, when getting enough protein to support muscle and enough fiber for gut and metabolic health becomes increasingly important.

But the solution isn't spending your entire Sunday prepping perfectly portioned meals. It's having a few easy, nutrient-dense options you can make once and eat on repeat.

You don't need more time. You need fewer decisions.
And that's exactly why I love this soup. 👇

Makes 4 servings:
1 small white onion rings(about 1 cup chopped)
1 tbsp olive oil
1 pound of chicken (or sub 12 oz rotisserie chicken and cut out the chicken cooking time)
1 jar salsa verde
4 cups low sodium chicken bone broth (I like Dr. Kelly Ann)
1 can (3.5 cups) low sodium white beans (I like white navy beans), rinsed
1.5 cups frozen brown rice
1/2 cup sliced green onion
1/2 cup cilantro
more green onion, cilantro for garnish.

Heat a large pot over medium high heat. Add olive oil. Add onion and cook for 3-5 minutes. Add raw chicken to the pot. Pour in salsa verde and bone broth. Cover and cook over medium heat for 10 minutes. In the meantime chop green onion and cilantro.
Once chicken is cooked through, shut off heat. Shred chicken in pot. Add green onion, cilantro and brown rice. Turn back on heat. Cook over medium heat.

A healthier life doesn't happen when you finally have more time. It happens when you start making time for what matters.

Here's the shift I want you to make this week:
Stop treating your health as something you'll get to when everything else is done. A little intention at the beginning of the week can change how you show up for the rest of it.

Not because you need a perfectly organized life, but because you're making the decisions that support your health beforethe week starts making them for you.

This is a big part of what I help my coaching clients do. We turn knowing what to do into simple, repeatable systems that make taking care of themselves part of their lives, not another thing competing for their attention.

Your health doesn't need to take over your calendar. But it deserves a place on it.

What if the answer to feeling better after 40 isn't doing more, but getting really clear on what actually matters?
That's the biggest lesson I've learned from my own health journey.

For years, I was putting so much effort into being healthy. But I wasn't always putting that effort into the things that would make the biggest difference.

And I see so many women in midlife doing the same thing.

We're spending money on supplements, experimenting with new diets, trying different workouts, and chasing the next wellness trend.

Meanwhile, the things that can really move the needle aren't getting enough attention.

Building muscle. Eating enough protein and fiber. Prioritizing sleep. Recovering from our workouts. Managing stress.

Not glamorous. Not viral-worthy. Not particularly complicated. But incredibly important, especially in midlife.

The real strategy is knowing which fundamentals need your attention most, how to make them work in your ACTUAL life, and what you can stop wasting energy on.
That realization changed how I take care of myself. And it's the foundation of how I approach helping other women.

Because you don't need to do ALL the things.
You need to do the things that matter most, consistently enough to make a difference.

That's why I created Live Powerfully: to help high-performing women over 40 cut through the wellness noise and build a personalized strategy for feeling stronger, more energized and more confident.
Not more wellness information. More clarity on what actually works for YOU.

Comment REBUILD and I'll send you my free Five Day Rebuild to help you start focusing on what matters most.

What if the answer to feeling better after 40 isn't doing more, but getting really clear on what actually matters?
