I know everyone loves looking at a beautiful baked good but if you are following my brand then perhaps you are here for the salad? Life is all about balance, right?
This Mexican-inspired salad was actually supposed to be posted on Cinco de Mayo, but life and my real job blew up on Tuesday, so instead we had our little family fiesta on Wednesday.
If you love Mexican flavors then you will love this tasty and easy-to-make salad. The Mexican Goddess dressing is thrown together in a blender and the salad comes together really quickly (you may already have most of the ingredients in your house).
Many of you also told me you need quick lunch ideas. You can double the salad and easily have leftovers for one or two lunches (mix the beans, tomatoes, scallions and corn, and when you are ready to eat add the lettuce, avocado and cilantro otherwise you’ll have a soggy salad which is not appetizing).
The dressing makes about 1 1/2 cups but I promise you’ll use it! Try this salad with your next taco Tuesday!
Maybe go crazy and throw in a few tortilla chips (my favorite are @sietefoods lime grain-free tortilla chips). Enjoy!

A hearty salad with Mexican-inspired flavors.
Ingredients
For the salad:
- 1 cup fresh or frozen, thawed corn
- 4 cups shredded romaine or butterhead lettuce
- 1/2 cup cooked, drained, rinsed, black beans
- 1/2 cup chopped cherry tomatoes (or other tomatoes)
- 4 scallions, sliced
- 1/2 ripe avocado, diced
- -1/4 cup chopped cilantro.
For the dressing:
- 2/3 cup plain, almond milk greek yogurt (such as Kite Hill Unsweetened Greek Yogurt or regular Greek works well)
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh squeezed lime juice (about 2 limes)
- 1 tbsp maple syrup or raw honey
- 1/4 cup cilantro
- 2 scallions, which and light green parts chopped
- 1/2 green jalapeño (or more if you like things hot)
- 1/2 tsp salt
Instructions
- Combine all the dressing ingredients in a blender until smooth.
- For the salad, lightly coat the lettuce with desired amount of dressing. Top with remaining ingredients. Add more dressing if desired.
