Mediterranean Salad With Chicken and Roasted Chickpeas

April 17, 2024
Jump to Recipe·Print Recipe

This mediterranean salad with chicken and roasted chickpeas is topped with olives, pickled onions, cucumbers and finished with a sprinkle of goat cheese and lemon tahini dressing. This salad may change the way you look at salads!

Bed of baby spinach and arugula salad layered with lemony grilled chicken, za'atar roasted chickpeas, olives, cucumbers with a tahini dressing and sprinkled with goat cheese.

Lunch can be tricky – it can be hard to find time to put together a nutritious meal when it falls smack in the middle of your day when you are busiest. Enter this Mediterranean salad bowl. Prep the grilled chicken, za’atar roasted chickpeas and the lemon tahini dressing. Then take 5 minutes to assemble when ready!

Ingredients in this Mediterranean Bowl

  • Grilled chicken – For the best flavor, make my Greek marinated lemon chicken for this dish. Prep your chicken on a Sunday, or use rotisserie chicken.
  • Za’atar-spiced chickpeas – za’atar spice is actually a middle eastern spice with a lemony flavor. You can use store-bought chickpeas in a pinch.
  • Lemon-tahini dressing – This dressing has super simple ingredients including tahini, a nut butter made from sesame seeds, lemon juice, garlic, and water.
  • Spinach and arugula mix – This will serve the base of the salad.
  • Cucumbers – Rich in water and gives the salad some additional crispness.
  • Kalamata olives – Give the salad some salty flavor plus healthy fat.
  • Pickled onions – Look for pickled onions in the refrigerated section of your food aisle. You can also make your own.
  • Goat cheese – Completely optional but goat cheese gives the salad a level of richness. You could use goat feta as well.

How to Make Mediterranean Salad With Chicken

Step 1: Prep the grilled chicken. Use my Greek marinated chicken recipe. I love using chicken tenders because they soak up the marinade quickly and cook quickly!

Step 2: Prep the roasted chickpeas (recipe included below).

Step 3: While the chickpeas are roasting, prep the lemon tahini dressing.

Step 4: When ready to eat, assemble the rest of the ingredients in individual bowls and serve!

Bowl of arugula and spinach greens layered with kalamata olives, cucumbers, roasted chickpeas, greek grilled chicken and pickled onions. Served on the side with extra chickpeas and a bowl of tahini lemon dressing.

Storage

  • Store all of the elements of the salad separately until you are ready to eat. Do not pre-mix or you’ll get a soggy salad.
  • Store the chicken in the refrigerator in a covered glass container for up to 4 days.
  • The chickpeas should be stored in an airtight container at room temperature. They’ll loose some crispiness after the first day.
  • The dressing should be stored in the refrigerator for up to 4 days. If the dressing thickens after cooking, add a tablespoon or 2 of warm water to the dressing and mix well before serving.

6 common mistakes you may be making that’s making healthy eating harder.

1. Thinking every meal has to be an elaborate recipe. Especially during the week I put together simple assembly line style meals (protein + grain + veggie + sauce) and make a few special recipes on the nights I’ll have more time. Keeping meals simple also were key during the periods I was trying to actively lose weight.

2. Spending hours on meal prep. Meal prep doesn’t have to mean 3 hours on Sunday with the same meals all week. Prep few components throughout on one day (extra protein, grains in the instant pot) and use the ingredients as a base for meals throughout the week.

3. Shopping for multiple individual recipes. All it takes is a few busy days at work or a sick kid and I have food going to waste in my fridge. Instead I think in components (ground beef, vegetables, grains) and have some go to “assembly line meals” I can adapt.

4. Not inderstanding portion sizes. I was eating healthy but once I spent time weighing/measuring my food and track it I saw where I was undereating (carbs) and overeating (fats!). I also realized I was eating way too much protein and not enough fiber.

5. Neglecting fiber. just because you eat a lot of vegetables doesn't necessarily mean you're taking in enough fiber. (vegetable salads aren’t a great source, ladies). Being more intentional about fiber with grains, seeds, fruit will help keep you satiated and improve digestion.

6. Overlooking the freezer. I noe make sure the freezer is always stocked with frozen pre-cut vegetables, rice and proteins. When possible, make extra of soups and sauces to quickly reheat. This ensures you can always pull together a quick healthy meal and avoids defaulting to take out.

The goal is a system that works in real life. Follow @livepowerfullyco for more ways to get strong, lean, energized and confident in midlife.

The Busy woman’s cheat sheet to changing your body in midlife. Here are six things that I stopped doing that made healthy eating easier and help me get leaner and stronger at 47.

1. Thinking every meal has to be an elaborate recipe. Especially during the week I put together simple assembly line style meals (protein + grain + veggie + sauce) and make a few special recipes on the nights I’ll have more time.

2. Spending hours on meal prep. Meal prep doesn’t have to mean 3 hours on Sunday with the same meals all week. I prep a few components throughout the day (extra protein, grains in the instant pot) and use ingredients throughout the week.

3. Planning individual recipes. All it takes is a few busy days at work or a sick kid and I have food going to waste in my fridge. Instead I think in components (ground beef, vegetables, grains) to put something together quickly.

4. Neglecting portion sizes. I was eating healthy but once I started to weigh my food and track it I saw where I was undereating (carbs) and overeating (fats!). You can be eating clean but macros + calories count too.

5. Neglecting fiber. When I experimented with tracking my food I saw I wasn’t taking in nearly enough fiber (vegetable salads aren’t a great source, ladies). Being more intentional about fiber helped improve my satiety and digestion.

6. Forgetting about the freezer. I make sure the freezer is always stocked with frozen pre-cut vegetables, rice and proteins. When possible, I made extra of soups and sauces to quickly reheat. This ensures I can always pull together a quick healthy meal and avoids defaulting to take out.

If you're overwhelmed by all the health advice for women over 40, comment HABITS and you can immediately download the Health Edit - with simple habits you can start today for immediate return, questions to bring to your doctor, and labs worth discussing.

Here's something I wish more women understood:
Not every healthy habit deserves the same amount of your time and energy.

Three intentional strength workouts may do more for your goals than five random classes.

Eating enough to support your activity may serve you better than cutting another 200 calories.

And an extra hour of sleep might be more valuable than another early morning workout.

The point isn't to do everything. It's to understand what your body needs now and focus your effort there.

That's the philosophy behind Live Powerfully. I help ambitious women in midlife cut through the wellness noise and build personalized strategies for strength, energy, and long-term health—without making wellness another full-time job.

Comment HABITS and let's get you started.

This is where I think so many high-achieving women in midlife get stuck....

We're used to believing that more effort + less calories equals better results. So when our bodies don't respond to that strategy anymore, we double down.

But here's what I wish I'd understood sooner: if your whole goal is just to burn calories, you aren't building anything that is gonna support your metabolism in a long-term.

If you want to build muscle, you need a plan that challenges your muscles progressively (Ps - that doesn't always mean lifting heavier weights, but we'll get to that in another post.)

You need enough food to support that work.

And you need recovery so your body can actually adapt.

It's not about abandoning cardio or never being in a calorie deficit. It's about understanding how all the pieces work together instead of treating each workout like a transaction for calories in and out.

**This is exactly what I help women do through Live Powerfully.**

We look at your nutrition, strength training, recovery, and the realities of your schedule to build a personalized health strategy that supports your goals without making wellness another full-time job.

Because you've already built a big life. Your health strategy should help you live it.

Follow @LivePowerfullyCo for less wellness noise and more of what actually works.
