Edible cookie dough? YES PLEASE! Edible cookie dough that is vegan, gluten-free and made with wholesome, healthy ingredients? Are you thinking, “TELL ME MORE”?
These cookie dough balls are perfect if you are craving something sweet but don’t want to ruin your diet. I personally have a huge sweet tooth and there are days where fruit just isn’t going to cut it. You just need a cookie. These little guys taste decadent because of the healthy fat and chocolate but are made with only a handful of healthy ingredients. These are also a great snack you can feel good about feeding your kids. They even make a good pre-workout pick-me up!
These cookie dough balls include a nut butter of your choice, oat flour, honey or maple syrup, flaxseed, vanilla extract and chocolate chips and a dash of salt. That’s it! And they come together in 5 minutes!
A few helpful notes:
- Nut butter – Try almond, peanut butter, cashew, or sunflower butter if you are nut free. You can even do half and half if you don’t have enough. For this round, I made them with half peanut butter and half cashew.
- Oat flour – I bake a lot with oat flour because I like the mild taste. Another reason I like oat flour – I can easily make it at home! I always have a huge bag of gluten-free rolled oats on hand. Personally, I find the consistency of the flour to be best when I use my coffee grinder, but you can also make oat flour using a food processor. Be sure to grind well until it becomes the consistency of flour. I sometimes will sift the flour to remove the oats that did not completely break down.
- Honey or maple syrup – Either works. If you are vegan make these with maple syrup. I personally prefer the taste of using the syrup instead of honey because maple syrup is not as sweet.
- Chocolate chips – My absolute favorite are Enjoy Life Dark Chocolate Chips. They are dairy free and also free of 13 other allergens.
